What is the difference between "amounts" and "quantity"? When should I use these two words?

> Amount = a collection or mass, especially of something that cannot be counted.
Small amounts of land were used for keeping animals.
He paid regular amounts of money to a charity.

> Quantity = the amount or number of something, especially that can be measured.
Police found a large/small quantity of drugs in his possession.
They are now developing ways to produce the vaccine in large quantities.

Ogólnie można używać wymiennie. "Quantity" używa się dla określenia np. "dużej ilości".
"Amount" przy pojęciach abstrakcyjnych lub np. pieniędzy "amount of time", "amount of love", "amount of money". Dodam jeszcze że do tej dwójki dorzuciłbym jeszcze trzecie określenie "a number of".
